Bone Broth--Good for what ails you!

I've been reading a lot about the healing properties of bone broth. It historically has been recognized as being beneficial for the lining of the intestine and boosting immunity. Bone broth is chock-full of gelatin and other proteins and is an all-natural source of easily digestible calcium, glucosamine and chondroitin, hyaluronic acid, and many minerals. And guess what!

Bone broth from pastured poultry is even MORE beneficial than broth made from commercially-raised chickens. (Big surprise!) I've made it before from a store-bought chicken, and it initially is covered with a white, foamy, scummy froth. Turns out these are impurities from the chicken that are supposed to be skimmed off at the start of cooking so the broth doesn't have an 'off-flavor' from all of those impurities. Hmm. I made some bone broth over the weekend from one of OUR chickens, and guess what! There wasn't any nasty, foamy, white, scummy froth to skim off. I took that as an indication that our pastured birds have far fewer 'impurities' to cook out of the bones. :) We're embarking on a 'cup-of-broth-a-day' adventure.
